Melissa, Have you tried SkinnyPop? It comes in big bags and in individual bags. It is approved and 3 cups has 30 calories and counts as 1 carb!

Any suggestions for an afternoon snack that can be eaten while driving. I know it is not optimum to eat while doing something else, but I need a snack for after the gym on the way home – otherwise, I’ll either eat everything in sight when I get home or worse, stop on the way home – which usually does not mean making good choices.

I have usually gone for some nuts and dried fruit, but afternoon snack calls for veggies. I cannot eat raw carrots or celery due to having had my soft palate clipped for apnea. I choke on both foods unless they are cooked. And I dislike cucumber. Besides I really just cannot think of a veggie match to go with almonds or walnuts that I would want to eat raw. With cheese, yes, but not with nuts alone.

I suppose the real question is – is it okay to have more fruit servings than suggested on the menu? I realize that veggies are lower calorie and less ‘sugar’ but dried fruit and nuts are much simpler to keep in the glove box for ’emergencies’ (like ensuring I drive past the drive-thru while on errands)

This does tend to also cut down on my veggie intake, although I do tend to have an extra veggie at breakfast in my eggs, so not too bad. I seem to average 2-3 veggie exchanges a day.

Also, on days when I’m somewhere I can eat without worrying about spilling, I tend towards hummus for afternoon snack. I’m trying to eat more veggies then (instead of pita), but I’m curious whether sugar snap peas count as carb like regular peas or as veggies. I often use cherry tomatoes, but I like a change.

Lastly – any good ideas for non-lettuce veggie salads to keep in the fridge so I don’t have to make one every lunch? I usually keep a fennel, orange and onion on hand and a tomatoes and blanched green beans, but that gets repetitive. So any good veggie salad suggestions would be welcome.

Roulade
1 x Tub of Quark
4 x Eggs
5 x Table spoons Powdered Sweetener
1 x Tea spoon of Baking Powder
1 x Tea spoon of Vanilla Essence
Fruit of your choice
Baking tray
Baking Paper/Liner
Preheat the oven to 180′
Seperate the egg white from the yolks into 2 bowls.
Whisk the yolks with half a tub of quark, baking powder, vanilla essence and 4 tblsp sweetener.
In a seperate bowl, whisk the egg whites untill stiff.
Then whisk half the egg whites to the egg yolk mixture, then fold the rest in.
Pour into a lined baking tray bake in the oven for 15-20 mins at 180 degrees.
Leave to cool then spread the rest of the quark (mixed with the other tblsp of sweetener) over the sponge.
Scatter the fruit over the sponge and quark and roll up like swiss roll.
Optional – Sprinkle more sweetener over the top if needed.

35g orridge oats. 200g Fat free yogurt, berries of your choice. Layer the oats fruit and yogurt, seal in a container. Pop in the fridge over night. In the morning give it a good stir and it’s ready to eat. Frozen berries work best.

Hello

i only joined at the weekend and started Monday on a fixed menu from the menu tab, decided this wont work for me as it feels like a military maneuver prepping all the meals. i work long hours and so time spent in the kitchen on a daily basis will be a struggle to sustain. i figure if i loose a day at the weekend cooking and freezing the the on line recipes i stand a better chance. but i would feel safer if i could input my menu choices on the website (dont know the tab to use to do this) to calculate the positive% of the menu choices and be able to have a shopping list automatically created on line …

Is it possible to do this?

Hi I’m new and still finding my way round. I am trying to get the ingredients for the “brown butter bread” recipe but cannot get any flax meal. Is there anything that I can substitute it with?

since pickles are free… I’d go for a pickle(lots of sodium , though) Also you could try to sneak in some Skinnypop in a baggie in your purse. It’s 3 cups for 1 carb serving.

Hi, Dianne. You can see what is allotted to you each day by clicking on “Exchange mode” in the toolbar above your menu, and noting the following approximate values for exchanges:
1 carb exchange = 15 grams of carbohydrates + up to 3 grams of protein
1 protein exchange = 7 grams of protein + up to 5 grams of fat
1 fat exchange = 5 grams of fat
1 fruit exchange = 15 grams of carbohydrates
1 vegetable exchange = 5 grams of carbohydrates + up to 2 grams of protein
1 sweet exchange = up to 15 grams of carbohydrates + up to 5 grams of fat
1 free exchange = up to 5 grams of carbohydrates or up to 2 grams of protein or fat
As for bread crumbs vs. Panko, yes you can substitute, but just be sure that it is based on whole grains.

Is there a replacement for cornmeal? Also can you use Planko Bread Crumbs?
