Hi, Lisaanddave. Welcome back! The best way to handle that sort of a challenging schedule of challenging situations such as two filling meals in a row with a smorgasboard is through portion control – choose only what you absolutely love, and only have a tablespoon or two of each. This way, you limit overdoing, but without obsessing.
As for the light version of a big meal, turkey breast is the usual go-to favorite, and if your side dishes are made up of non-starchy vegetables, you can’go wrong. Examples include not only salad and steamed greens, but also mashed cauliflower instead of potatoes, seasonings and light sauces instead of heavier fare, as well as elegant vegetable soups. I have not been on here in awhile, but want to get back into the swing of things. My question and needing ideas for this. I have inlaws coming Christmas around noon time, then around 5-6 pm we go ( without them) to my sisters for a traditional ( filling) dinner. My inlaws ( mil, picky) still wants a dinner here at noonish. I wanted to do a breakfast type of thing , which has been veto’d ( mil).. so how to do a light version of a big meal? Maybe a turkey breast? but what to do with sides so its, light, not having a real smorgasbord of stuff that we will be having later on again? Any ideas are appreciated. 🙂
