The following is a tried-and-true basic recipe, based on the genius of Julia Child:
For a single serving
Heat a teaspoon of olive oil (best if infused, i.e. with basil or garlic) and add 1/4 cup raw quinoa, and stir-fry a bit until browned and emitting a toasty aroma. Add 1 cup broth (vegetable, onion, chicken or beef flavored, whatever your preference), a pinch of saffron threads, and a small bay leaf. Cover and let cook until very, very soft – the softer, the more the flavor will come out. Add water as needed to keep the mixture moist.
In addition, the following are some Trim Down Club recipes:

Broccoli Quinoa

Quinoa Pudding

Quinoa Carrot Patties

I had quinoa on my menu today at lunch and just fixed it by the package directions…yuck! I added a little chicken broth and salt & peppered it and forced it down.
If anyone has a good recipe, please share : )
