Thannk you, the other day someone mentioned coconut sugar to me I have been looking for it. I do not use sugars that often, as soon as I find the coconut sugar I will pick some up, I understand it has a diffrent taste. ;~)

Yes, blend the quinoa for 2 minutes or so in a high-speed food processor.
Which sugar substitutes have you tried? If you have a bad reaction even with the natural ones so far, try coconut sugar. It is not carb-free, but it is very, very gentle to the digestive system – just use a little here and there so it doesn’t add up too much.

Try quinoa flour – but lightly toast it in the oven first.

In some of the recipes it calls for ALMOND FLOUR, I can not eat almonds in any form, along with other foods and nuts. what can I use instead. I am also trying to not eat a lot of wheat flour and gulten. I will not use a sugar substitute, so how much sugar if any should I use.
