Hi, swtpeas. The gram information is useful if you are reading food labels – that way you know what amount of a certain food would be considered an exchange that can fit into your menu.

Please explain what 1 carbohydrate exchange
15 g carbohydrates + 2-3 g protein per exchange means just under the Breakfast meal. I understand 1 carb exchange is listed below, but I do not know what I need to do with the
(15 g carbohydrates + 2-3 g protein per exchange)

Hi, swtpeas. You can indeed start with an empty menu and build your own (exchanges: https://www.trimdownclub.com/exchanges-lists), being sure to evenly space foods throughout the day.

Am I able to start with an empty menu and built my own menu based on exchange amounts of 6-7 carbs, 10 proteins, 3 fats, 3-4 fruits and veggies each.
