Hi, deehr. Yes, it is a lot – the intention is to stave off hunger (in addition to improving your health). Note that you can have the vegetables cooked, which means 1/2 cup servings. The vegetables can also be part of other dishes, such as stir-fry or soup.

this is my first day im looking at the menus; im really expected to eat 4 servings of veggies at one meal? That is about 4 cups of veggies? that seems like ALOT
