The foods “never to eat” are undesirable versions of popular foods for which there are better choices – tofu, for example, is fine if the soy is organic and the processing does not involve hexane. Quorn was added because many of our vegetarian members requested it, and of the meat substitutes available, it is not among the worst. With regard to vegetarian protein sources, nuts, edamame, fermented soy (i.e. tempeh, fuyu), seitan, and vegan “dairy” products are featured, and items such as mushrooms and seaweeds are “free” and can be added wherever the menu states “Vegetables of Your Choice”. |
