Hi, Caryl. Most sprouts are “free” vegetables, meaning they count as vegetables, but don’t take up room in your menu, but mung beans (because the beans are attached to the sprouts) are a vegetable exchange per cup.

I grow my own alfalfa, mung bean and buckwheat groat sprouts. Could you please tell me how they would fit into my menu plan? Are they classed as seeds or as vegetables?
