Hi, cluett. These are similar to units of food components used by diabetes associations around the world to plan menus for managing blood sugar and weight. For example: http://www.diabetes.co.uk/diabetic-exchange.html. Our exchange lists are here: https://www.trimdownclub.com/exchanges-lists.
The general values are as follows:
1 Carb = 15 grams of carbohydrates + up to 3 grams of protein
1 Protein = 7 grams of protein + up to 5 grams of fat
1 Fat = 5 grams of fat
1 Fruit = 15 grams of carbohydrates
1 Vegetable = up to 5 grams of carbohydrates + up to 2 grams of protein
1 Sweet = up to 15 grams of carbohydrates + up to 5 grams of fat
Free = up to 5 grams of carbohydrates or protein, or 2 grams of fat.

I don’t understand the ‘exchanges’ given at the end of the recipes. Could someone explain please
