Freezing is an excellent idea – I would estimate that they should be fine for more than a week. The only special directions I would recommend would be to divide them into since portions before freezing, then thawing only the portions that will be eaten, i.e. one for each person, so there is no extra to tempt you.
Beyond that, some of the recipes can be reduced during the preparation.

Most of the recipes look wonderful and I can’t wait to try them. I have questions about them though. If I follow the recipe as is most of them serve 6–12. Would these meals freeze up ok and if so how long would they be good for in the freezer? Are there any special directions for freezing them and/thawing and reheating?
