Hi, Mickey. Any of those substitutions would be just fine. Do try to go organic for the vegetal milks, and try organic and/or grass-fed for dairy milk.
Note that rice and almond milks do not have any protein and should be fortified with calcium and vitamins. If you follow the menus here, you won’t miss the protein.

I want to follow the recipes so I can truly benefit from the program but I’ve done some investigating on raw dairy. It is said that consuming raw milk, butter or any raw dairy product can be harmful to your health. I already have some Heath issues and don’t want to push it!! Can I use rice milk, almond milk or nonfat milk in its place? And regular butter? Or anytime recipe list includes RAW can sub for a lower fat alternative?
