Potatoes are considered a carbohydrate food, and can be used in place of such items as pasta, rice, sweet potato, corn, parsnips, peas, bread, or crackers on the menus. One half of a medium potato (about 3 inches long) is a carbohydrate exchange, or equal to a slice of bread or 1/2 cup of other cooked carbohydrate food. |
