Try selecting fewer other items in the protein and fat categories – because meats are high in both, it could be that there were not enough allotted exchanges remaining.
As for the recipes, you can scale them down – try dividing the ingredient amounts by 4 (though be sure to leave at least 1 full tsp of oil if you need to sauté). You can also freeze leftover portions – I understand you can’t cook where you work, but is there at least a microwave where you can heat things?

Menu’s don’t work at all for me and the wife. Need recipes for two and need lunches and snacks that are able to be eaten cold. No facility to cook where I work. Seems to be lacking in meats in the suggested recipes. From the menu check list there were a lot of these but never see one in menu presented.
