Hi, EBurrell. Flank steak tends to be a higher-fat cut, but if it is grass-fed, the fats are better fats than in regular steak. Another alternative is to just use a very lean cut of organic beef if the price is right.

My menu has strip steak, but I can’t find it. Also, I couldn’t find the alternative steak options. The only organic, grass fed steak I could find is Beef flank steak? Is Organic, grass fed beef flank steak ok for replacement?
