To answer your questions here, though, we do recommend you balance protein and carbohydrates at each meal, though the latter doesn’t necessarily need to be a grain product – for example, fruits and potatoes will do, and legumes have both.
With regard to your sweet tooth, you can certainly have something every day – note the “sweet” exchange in your menu.
As for the expense and simplicity, you are on the right track. Just do what you can, even if it’s just a little better than what you did before. The small changes will add up.

Am I to balance protein and whole grain with each meal and snack? What is the guiding principle of what vegetables I should eat and when? How can I satisfy my sweet tooth without artificial sweeteners and refined sugar? At 73 I’m not as mobile as I’d like, but that is getting better as I lose weight [I’ve already lost fifty pounds and want to find a way to lose the last 25 in a way that I can maintain without counting calories my whole life. And I can’t afford to buy ALL new foods but am adding a few each trip to the store. I don’t do a lot of cooking anymore so am looking for simple nutritious meals and snacks.
