| | What about yogurt cheese? I make yogurt from skim milk, then strain off as much whey as I can get, using a cheesecloth. I just joined and am just getting familiar (don’t know what the “exchange list” is, but can guess, and will be looking for it!). The yogurt cheese I make is really similar to a cream cheese, though, not a hard, aged cheese. Works great as sour cream, too. Just an idea. |
| | Don’t know if this helps but on the Exchange Lists it includes cottage cheese, 4 kinds, grass or raw cheese? ricotta cheese and string or block cheese, low fat. |
| | Hi, Nylsor. It may be because those other cheeses have higher fat content. If you really want them, then go ahead and have them – if you can find reduced fat or pastured versions, so much the better. |
| | Why when I want cheese its always goat cheese that it’ll allow me to have. I can’t seem to find any other cheese besides having a tiny bit of parmesan cheese. Why doesn’t it talk about other cheese like chedder, mozzerela, and other cheese? |
