Sauteed Eggplant

2 small eggplants (aubergines)
1 red chopped onion
2 chopped cloves garlic
1 can organic chopped tomatoes (14oz.)
1/2 cup chicken broth
2 tbsp. Tomato paste
1/4 cup capers
Oregano, thyme, parsley chopped
2 bay leaves
Salt and pepper to taste

Put 1 tbsp olive oil in cooking pot and add onion and garlic. Cook for 3 minutes.
Add eggplant, tomatoes, chicken broth, tomato paste.
Stir well, cover and cook at very low temperature for 2 minutes. Enjoy!

Serving size: 1 cup
