Hi, MichelleLee. Sprouting absolutely does make beans more digestible, but only mung bean sprouts (which don’t have the actual bean attached) would be considered a vegetable. The others are legumes.

I bought a pack of Beansprouts this week (as I like them and you said sprouted beans are healthy, I read somewhere that sprouting a grain converts it from a seed to a vegetable and makes it easier to digest).The pack says they are sprouted Mung Beans, but I can’t find them on the list so don’t know if they class as mung beans or a vegetable of my choice.
Also, is it possible to buy/make a bean sprouter, so I can just sprout a portion of beans when I need to instead of buying a full packet (300g).
