The healthiest salad dressings have a base of olive oil or flaxseed oil, plus lemon or lime juice or a vinegar (apple cider, balsamic, wine, etc. types – there are quite a few flavors), with herbs and spices to taste (most popular are garlic and black pepper, but you can experiment. A few drops of sesame or hazelnut oils can infuse some flavor as well. Note that although those low-sugar citrus juices and the vinegars are fairly low in carbohydrate, fat, and protein (and thus “free”), each teaspoon (5 ml) of oil is a fat exchange. Your menu does give you fat exchanges with meals for this purpose. If you would rather have more dressing, you can trade a starchy carbohydrate exchange (usually 1/3 or 1/2 cup of pasta, rice, or potato, or a slice of bread) for 2 teapoons of oil.
If you like creamy dressings, you can add a little tahini or yogurt to the mix.

We eat a lot of salads. My husband will only eat salad and meat for dinner. Leaving me needing help adding variety. He is thin, ugh.
