| | Hi, Nicole. When you write “coconut milk” in the current context, I assume you are inquiring about the beverage in a carton, and not the cream substitute in a can. Almond milk is a carbohydrate exchange, while coconut milk is half a carbohydrate + a whole fat exchange – therefore, you can plug them in wherever you have other carbohydrate and/or fat exchanges, i.e. breads and/or oils/nuts. If you use them in place of regular milk, note that neither is a source of protein, so if you substitute more than a glass a day, consider getting an extra protein exchange elsewhere (in this case, you can substitute a protein exchange for a fat or carbohydrate). |
