Hi, debcargo. Since the polenta is a starch and you made it parve, you can have any source of protein (meat, dairy, or plant-based) and a fruit or vegetable. The traditional Italian side dish is a beef tomato sauce and cheese, but either one would give you the right nutrition and keep it kosher.

I had some leftover polenta made with salt and non-dairy cream. I baked the leftover in muffin tins. Any ideas for a snack or a side? Thanks, Debbie
