Hi, WilloJaz. Those would be added milk solids, which are generally highly oxidized and can work against your efforts here. Some skimmed milks are made without them – these are the types that resemble “blue water.”
As for the cheese, we do a soft cow’s milk cheese listed, which can be used for feta.

I read something recently that said non-fat or skim milk wasn’t as healthy for you as 1% or 2% milk. Does anyone know what components would be in skim milk that would make it less healthy? Also, I notice feta cheese is always quoted in the menu as goat’s milk cheese. Does it make any difference if it’s made from cow’s milk?
