Hi, Over50. Converted rice can have a low glycemic index if cooked extensively. However, at a certain level, glycemic index is less an issue than the big picture, with contains overall nutrition. In this cases, brown (whole) rice has some of the best of both worlds.

I have been reading some articles on converted rice, parboiled vs brown rice. The article stated the converted rice has lower glycemic index rating and is more nutritious. Fact or fiction
