I will do my best to help you with the rest of your questions here. Vegetables are a special group – you don’t select specific non-starchy ones, rather they generally show up in your menu planner only as “Vegetable of Your Choice,” and you make that choice when you prep the meal. As for free foods, none of them specifically show up in your menu because they don’t need to be calculated.
Quorn products are indeed in the Menu Planner lists in the Protein category under “Vegan Substitutes” – note, however, that they are not actually vegan, as they do contain eggs.
I have analyzed your menu, and I have a couple of notes.
With regard to protein, I would suggest to have more chia and flax seed in place of some of the nuts – this will increase protein and give you additional omega-3 fatty acids, which are somewhat low in your menus. Also, I would encourage you to be sure your nutritional yeast is fortified with vitamin B12 and to have at least 2 tablespoons each day if you don’t have other B12-fortified foods. |
