Hi, Patricia. How many eggs you can eat per week depends on your medical history and the types of eggs you choose. If you don’t have a history of cardiovascular disease related to atherosclerosis or complicated diabetes mellitus, and/or choose pastured (i.e., grass-fed) organic eggs, you can have 7 per week; otherwise, 2-3 would be recommended.
As for the cheeses, those types are more processed than we would recommend. I suggest you stick to regular cheeses, such as mozzarella, cheddar, etc.
Gravy with dinner is absolutely fine – from “scratch” with wholesome ingredients is best, of course, and be sure to not overdo. What type of gravy do you use?
