Home-made beef vegetable soup is easy for dinner as alternative to the chicken. And with lots of vegetables it really fills you up! Buy ANY cubed beef product at the grocery store (like stew meat, for example) and put into a pot of water – maybe 4 – 6 cups – enough to cover the meat and make a soup, then cook (boil/simmer) on top of stove for at least an hour. Next, add salt (1 – 3 teaspoons) and all the vegetables that you like, maybe 4 or 5 carrots, 2 whole potatoes, 1-2 zucchini cut into chunks, even a whole ear of corn sliced into 5 parts, a couple of sprigs of cilantro or parsley for flavor. And I also like to add one 2″ wedge of cabbage cut from a whole head of cabbage – because it adds great flavor (even though I don’t like to eat all that cabbage – I just set it aside.) I also add a half cube of chicken bouillon for flavor – just keep testing the flavor til you like it. Sometimes, if I have time, I will “stew” three small Roma tomatoes in a small pot of water and then after they are cooked, I remove the skins and mash them or put them in the blender and add to the soup to make ‘tomato/beefvegetable soup.’ Great flavor. If you make enough of this it will feed the family for 2 or 3 days. So easy!

Hello, I have been doing this for 1 week. The second week’s menu is pretty much the same, I am primarily sick of eating the chicken for dinner. I am doing the 8 week program. SHould I strictly stick to my menu or can I make different recipes for the different meals. I definitely want to lose weight, so I want the best bang for my buck, sort of speak. I’m also a little confused about the exchanges. Please Help!
