Hi, turtlehurder. Yes, there is a larger loss in boiling, unless you use the water, and the loss is greater with more time. For that reason, even though microwaving brings vegetables to a higher temperature than with stovetop cooking, the process is shorter and so there are lesser losses.

Ossie, is there a loss of nutrition when boiling veggies rather than steaming them? Also is there a loss of nutrition if steamed or boiled too long?
