Hi, Jeff. One-eighth of a typical 9×4-inch round frosted cake (about 2-1/2 ounces) is equal to 2 carbohydrate + 2 fat exchanges. Each 1/2 cup of regular ice cream (about 1 standard round scoop) is equal to 1 carbohydrate + 1 fat exchange, and a rich ice cream (e.g., Haagen Daaz), about twice that. You can make up for these by substituting green vegetables for starches at lunch and dinner (i.e. two meals) and baked fish for any meat or chicken. Enjoy!

My sons birthday is coming up and I would like to enjoy a small slice of cake and a small ice cream with the family that day. Is there something I can/should do for the rest of the day to accomodate this? Should I do something before I eat the cake and ice cream to minimize the effect on my blood sugar (a protein something?)
