Hi, Jenny, and welcome. Edamame is green (immature) soybean that looks like peas in the pod on the outside, lima beans inside, but is much tastier; it is generally steamed, and is very high in protein. It is available here http://www.makingthedifference.co.za/store/fragments/product-details/product-details-index.jsp?productId=6008000051545
Amaranth is a gluten-free grain, fairly high in protein, that makes a great porridge. You can also eat the leaves steamed like spinach.

I have just joined and in the menu planner have come across a couple of foods that I do not know – I live in South Africa and not familiar with these:
Amaranth and Edamame??? What are these – can anyone let me know
Thanks
Jennyu
