Hi, LWEtrucker. Imitation crab meat is actually quite processed, so we wouldn’t recommend it, but if you already have it, it’s fine for now – there are definitely worse things. If you don’t want to get actual crab, try Alaskan pollack, which is the basic fish from which they make imitation crab. Salmon, moose, and caribou are great – salmon is in the menu planner, and you can substitute moose and caribou for the extra-lean grass-fed meat in the planner.

As a substitute for chicken breast or some type of fish, is it possible to use imitation crab meat. I couldn’t find the ingredients on the package as I had already divided the bulk packages I purchased and froze, and apparently had already used the one with this information. I don’t want to purchase more if I shouldn’t be using it.

We also live in rural Alaska, so we have access to salmon, moose, and caribou, which I’m assuming are all acceptable meats.
