  1. ½ boiled skinless chicken breast
  2. ⅓ cup / 60 gm grapes
  3. 4 leaves lettuce, chopped
  4. Salt and ground black pepper to taste
  5. 6 cherries
  6. 6 walnuts
  7. 2 tsp. / 8 ml olive oil


  1. Dice chicken
  2. In a mixing bowl, add grapes, lettuce, chicken, salt, cherries, walnuts and pepper.
  3. Mix well and serve

Serving size: 1½ cups / 160 g or 360 ml

  1. Due to digestive issues my gastroenterologist has told me nor to eat green leafy salads unless I want to experience even more stomach pain than I normally have. I asked if it would make any difference if I chopped it up very fine. He said that smaller pieces would not make a difference.
    I can eat green beans, butter beans and green tomatoes but I miss the crunch of a green salad. Any suggestions for substitutions for leafy greens in salads and for all you want to eat veggies? No broccoli either but that’s OK because I don’t like it

    • Hi, nmsmith. There are other crunchy vegetables that are not leafy, but do take care not to have more than 1 cup (240 ml) or they will need to be counted – note that your menu enables you to have 6 cups a day in any events. Light crunchy non-leafy vegetables include cucumbers, kohlrabi, turnips, radishes, celery, and bean sprouts (the white type).

    • Hi, Poppy. Exchanges are units of food representing a certain amount of nutrient. They are used as building blocks to put together a balanced menu. The following are the approximate nutritional values of exchanges:
      1 carb exchange = 15 grams of carbohydrates + up to 3 grams of protein
      1 protein exchange = 7 grams of protein + up to 5 grams of fat
      1 fat exchange = 5 grams of fat
      1 fruit exchange = 15 grams of carbohydrates
      1 vegetable exchange = 5 grams of carbohydrates + up to 2 grams of protein
      1 sweet exchange = up to 15 grams of carbohydrates + up to 5 grams of fat
      1 free exchange = up to 5 grams of carbohydrates or up to 2 grams of protein or fat
